A delicious dessert cake to finish off the Easter brunch. The sweet taste of kiwi goes perfectly well with the taste of white chocolate.

Ingredients

Scones
  • 2 EAT ME kiwis
  • 500 g flour
  • 125 g butter
  • 150 ml milk
  • 150 g icing sugar
  • 1 tbsp. honey
  • ½ tsp. cinnamon
  • 25 g baking powder
  • 3 eggs
  • 250 g white chocolate
  • 100 ml cream

Clotted cream

  • 4 tbsp. Crème fraîche
  • 4 tbsp. mascarpone
  • 1 tsp. icing sugar

Kiwi Jam

  • 4 EAT ME kiwis
  • 200 g gelling sugar

Let's get to work

Preparation
  1. Preheat the oven to 180 °C.
  2. Peel the kiwis and puree in the blender.
  3. Put a saucepan on the heat and bring the kiwi puree to the boil. Add the gelling sugar and simmer for 3 minutes. Then, let the kiwi jam cool down.
  4. Mix 2 eggs, butter, milk, icing sugar, honey and the cinnamon with a mixer. Then add the baking powder and the flour.
  5. Make balls of the dough using an ice cream scoop and place on a greased baking tray.
  6. Brush the top of the scones with a beaten egg.
  7. Bake the scones in the oven for 10 to 12 minutes until golden brown.
  8. Meanwhile, make the clotted cream by mixing the crème fraîche, mascarpone and icing sugar.
  9. Melt the white chocolate and fold the whipped cream through it.
  10. Slice the scones in half and spread a layer of clotted cream and kiwi jam on the scones.
  11. Stack all the scones in the shape of a pyramid.
  12. Pour the chocolate over the pyramid from the top.
  13. Peel the 2 kiwis and cut into cubes. Decorate the kiwi cake with kiwi cubes.

Decorate the cake with extra icing sugar.
