Avocado truffle toast

One of our favourite recipes with a delicious twist. We love avocado toast and this time we have added truffle oil and feta. This delicious lunch recipe is ready to serve in just 10 minutes.

Ingredients

Toast

  • 4 slices wholemeal bread
  • 2 avocados
  • ½ lime
  • A few drops of truffle oil
  • Salt and pepper
  • 8 cherry tomatoes
  • 60 g feta
  • Bean sprouts (optional)

Preparation method

  1. Toast the bread in the toaster or in a non-stick frying pan. Cut the avocado all the way around the stone. Twist the two halves apart. Remove the stone and scoop the flesh out of the skin with a spoon. Finely mash the flesh.
  2. Slice the lime in half. Take one half and squeeze the lime juice over the avocado. Stir the truffle oil into the avocado. Season with salt and pepper.
  3. Cut the feta into cubes and the tomatoes into slices.
  4. Spread the avocado purée onto the bread. Top with the feta, tomatoes and bean sprouts.
