  • Grilled eggplant with figs

Figs combine well with the soft eggplant. As this dish contains no carbohydrates it fits perfectly well in a balanced lifestyle.


  • 4 EAT ME figs
  • 2 large eggplants
  • 12 cherry tomatoes
  • 125 g soft mozzarella
  • 1 small leek
  • 2 tbsp. honey
  • 2 tbsp. balsamic vinegar
  • 1 dl. olive oil
  • Pepper & salt

Let's get to work

  1. Preheat the oven to 180 °C.
  2. Cut the eggplants lengthwise into 4 slices.
  3. Brush the eggplant with oil and season with salt and pepper.
  4. Grill the eggplant slices until done in a grill pan.
  5. Place the aubergine slices on a baking tray.
  6. Rinse the figs. Cut in half vertically and cut into wedges.
  7. Halve the tomatoes and slice the leek finely.
  8. Divide the figs, cherry tomatoes and mozzarella pieces over the eggplant.
  9. Drizzle with honey and balsamic vinegar.
  10. Place the eggplant in the oven for 5 to 6 minutes so the mozzarella melts well.
  11. Remove from oven and garnish with the leeks.
