Banana bread is really delicious and perfect as a snack. The cake is sweetened with ripe bananas so sugar is no longer needed. Do you want a gluten-free bread? Replace the rolled oats by almond flour.

Ingredients

  • 6 EAT ME figs
  • 300 g rolled oats
  • 150 ml yoghurt
  • 3 ripe bananas
  • 125 g raisins
  • 1 dl water
  • 3 eggs
  • 100 g hazelnuts
  • 100 g walnuts
  • ½ tbsp. cinnamon
  • 1 tbsp. baking powder

Let's get to work

Preparation
  1. Preheat oven to 160 °C.
  2. Cover the raisins with hot water and leave them for 15 minutes.
  3. Mix the yoghurt and the eggs together.
  4. Add the rolled oats and the peeled bananas and mix well.
  5. Meanwhile, chop the walnuts and hazelnuts coarsely and add them, together with the raisins, to the batter.
  6. Lastly, mix the cinnamon and baking powder into the batter.
  7. Grease a cake tin and pour the batter into the cake tin.
  8. Halve the figs and place them on top of the batter.
  9. Bake the cake until done in about 40 minutes.
  10. After baking remove the cake straight from the oven and let it cool down for at least 30 minutes.
