  • White asparagus omelette rolls

Wrap the white gold with omelette and raw ham. A nice take on the classic white asparagus with boiled eggs and ham.


  • 6 EAT ME white asparagus
  • 5 g EAT ME parsley
  • 5 g EAT ME chives
  • 6 slices of Coburger ham
  • 4 eggs
  • 150 g butter

Let's get to work

  1. Peel the white asparagus and cut 1 cm off the ends. Cook the asparagus with a pinch of salt until tender in about 8 minutes. Leave to cool down.
  2. Rinse and finely cut the parsley and the chives.
  3. Beat the eggs and add the parsley and chives. Season to taste with salt and pepper.
  4. Preheat the oven to 160 °C.
  5. Heat a small amount of butter in a small pan and pour a thin layer of egg into it. Bake in a few minutes. Repeat this 6 times.
  6. Roll the asparagus in the omelette still showing the tip of the asparagus.
  7. Take a slice of Coburger ham, fold in half lengthwise and twist around the asparagus roll.
  8. Bake the asparagus rolls in the oven for about 5 minutes until done.
