  • Salmon tartare with avocado

This tartar with avocado and salmon will steal the show at the Christmas dinner. Looks like it's made by the greatest chef on earth and it took no time at all!

Ingredients

  • 2 EAT ME avocados
  • 400 g fresh salmon fillet
  • 150 g grated Parmesan cheese
  • 2 tbsp. olive oil
  • salt and pepper

 

Dressing

  • 3 tbsp. mayonaise
  • 1 tbsp. olive oil
  • 1 tsp. paprika powder
  • 1 tbsp. honey
  • salt and pepper

Let's get to work

Preparation
  1. Preheat the oven to 180 °C.
  2. Make 4 rounds of the grated cheese on a baking sheet. Make sure they are all the same thickness. Bake for 8-10 minutes in the oven until golden brown.
  3. Cut the salmon fillet into small equally sized cubes.
  4. Put the salmon in a mixing bowl and add a spoonful of olive oil and some pepper and salt.
  5. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone and spoon out the flesh and cut into cubes. Keep a few pieces of avocado aside.
  6. Take a spring form and fill it with a layer of avocado. Then press gently.
  7. Put a layer of salmon fillet on top and press gently again.
  8. Carefully remove the ring and make another 3.
  9. Now make the dressing by mixing all the ingredients.
  10. Equally divide the kept aside avocado cubes on the tartare and put the Parmesan cheese biscuit on each tartare.
  11. Pour the dressing around the tartare.
