  • Pan-fried white asparagus

Usually white asparagus are boiled, try something different for a change and pan-fry them. Tastes great with a fresh vinaigrette.

Ingredients

  • 500 g EAT ME white asparagus
  • 1 tsp. finely chopped EAT ME dill
  • 1 tsp. finely chopped EAT ME parsley
  • 1 tsp. finely chopped EAT ME chives
  • 3 cloves garlic
  • 15 g butter
  • ½ dl + 2 tbsp. olive oil
  • 1 tsp. mustard
  • 1 tsp. sugar
  • 1 tsp. salt
  • 1 tsp. honey
  • salt and pepper

Let's get to work

Preparation
  1. Peel the white asparagus and cut 1 cm off the ends. Boil the asparagus with a pinch of salt until tender in about 8 minutes. Leave to cool down.
  2. Bring a pan with 3 liters of water to the boil and add the butter, sugar and salt. Add the asparagus to the boiling water and remove the pan from the heat. Let them stand for 4 minutes and then leave them to drain on kitchen towels.
  3. Meanwhile, use a food processor to make the vinaigrette by mixing the dill, parsley, chives, ½ dl olive oil, honey and mustard. Season to taste with salt and pepper.
  4. Cut the garlic in quarters.
  5. Heat olive oil in a frying pan and fry the asparagus and garlic until golden.
  6. Serve the asparagus on a large dish with the fried garlic and vinaigrette.
