Ice cream is delicious in summer of course. However, if you don't want to feel bad about eating ice cream. Go for frozen yoghurt with fruit! Easy to make and healthy as well!

Ingredients

  • 1 EAT ME kiwi
  • 8 EAT ME kumquats
  • ½ EAT ME mango
  • 50 g EAT ME blueberries
  • 1 L yoghurt
  • 1 vanilla pod
  • 50 g peeled pistachio nuts

Let's get to work

Preparation
  1. Peel the kiwi, cut in half and slice.
  2. Cut the mango along both sides of the stone or use a mango slicer. Then cut some strips in the seedless flesh, without cutting through the skin. Also slice in the opposite direction so you get a crosshatch pattern. Spoon the cubes from the mango.
  3. Rinse the blueberries and kumquats. Cut the kumquats into slices and remove the pips.
  4. Cut the vanilla pod lengthwise and scrape the vanilla seeds from the pod.
  5. Mix the yoghurt with the vanilla seeds.
  6. Cover a baking tray with plastic wrap and put the yoghurt on top.
  7. Scatter the fruit and pistachio nuts over the yoghurt.
  8. Place the baking tray with yoghurt in the freezer for at least 2 hours.
  9. Break or cut the yoghurt into pieces to eat.
