Avocado and salmon poké bowl

Ingredients

  • 150 g brown rice
  • 150 g fresh salmon fillet
  • 2 tbsp ketjap (sweet soy sauce)
  • 1 tbsp honey
  • ¼ cucumber
  • 1 tbsp sesame seeds

Preparation method

1. Cook the brown rice according to the instructions on the package. Drain and leave to cool. Slice the salmon into cubes and put in a dish. Add the ketjap and honey. Allow the salmon to marinate.

2. Slice the cucumber into cubes. Slice the avocado all the way around the stone. Twist the two halves apart. Remove the stone, scoop the flesh out of the skin and cut into thin strips.

3. Cut the mango into two halves along the stone. Score each half into squares without cutting through the skin. Turn out the halves with your thumb and slice off the cubes. Or use a mango slicer. Divide the brown rice between bowls. Add the cucumber, avocado, mango and marinated salmon to each portion.

4. Slice the lime into wedges. Sprinkle the sesame seeds over each bowl and garnish with lime.
