Soft on the inside, golden brown on the outside: French toast is a real brunch favourite. Top the toast with strawberries, raspberries and blueberries for a sweet bite.
Beat the eggs with the milk, vanilla, cinnamon and a pinch of salt in a large, shallow bowl.
Slice the brioche into four thick slices. Dip each slice into the milk egg mixture. Allow to soak for a while on each side, so they are well soaked but still intact.
Heat the butter in a pan on a medium-high heat. Add the slices to the pan and fry for 2-3 minutes each side until golden brown.
Place the French toast on plates. Spread the mascarpone over the bread and top with the strawberries, raspberries and blueberries. Drizzle with the maple syrup.
