Ingredients

Kiwi salad

  • EAT ME Kiwi
    4 EAT ME kiwis
  • 1 small red onion
  • 150 g feta cheese
  • EAT ME Avocado
    1 EAT ME avocado
  • 200 g mixed salad leaves (e.g. curly endive, butterhead lettuce, lamb's lettuce)
  • 1 tbsp black sesame seeds

Dressing:

Preparation method

  1. Mix the lime juice, honey and mustard. Whisk the olive oil through the mixture to make a smooth dressing. Season with salt and pepper.
  2. Peel and thinly slice the kiwis. Slice the red onion into half rings. Crumble the feta into small chunks.
  3. Make a cut in the avocados around the stone. Twist the two halves apart. Remove the stone, scoop the flesh out of the skin with a spoon and cut into thin slices.
  4. Arrange the salad leaves in a large bowl. Top with the slices of kiwi and avocado. Scatter with the red onion and feta. 
  5. Drizzle some dressing over the salad to taste and decorate with the sesame seeds.
