There is nothing more you could wish for on a warm summer evening than a delicious soup as cold as ice. Serve this gazpacho with tamarillo as small refreshing appetizer. Delicious and surprising.
Ingredients
2 EAT ME tamarillos
100 ml tomato juice
1 red bell pepper
⅓ cucumber
6 cherry tomatoes
½ clove garlic
1 red onion
1 tbsp. balsamic vinegar
pepper & salt
Let's get to work
Preparation
Slice the onion and peppers into chunks.
Peel the tamarillo and cut into small pieces. Keep half a tamarillo aside for decoration.
Cut the cucumber into small cubes as well and keep a tablespoon of cucumber cubes aside for decoration.
Put all the chopped ingredients and tomato juice in a blender and blend until smooth.
Place the gazpacho in a bowl and season with salt, pepper and balsamic vinegar.
Put the gazpacho 60 minutes in the fridge.
Serve the gazpacho in small appetizer glasses. Garnish each glass with a few diced cucumber and half a cherry tomato.
Garnish with a wedge of tamarillo on each glas.
