There is nothing more you could wish for on a warm summer evening than a delicious soup as cold as ice. Serve this gazpacho with tamarillo as small refreshing appetizer. Delicious and surprising.

 

Ingredients

  • 2 EAT ME tamarillos
  • 100 ml tomato juice
  • 1 red bell pepper
  • ⅓ cucumber
  • 6 cherry tomatoes
  • ½ clove garlic
  • 1 red onion
  • 1 tbsp. balsamic vinegar
  • pepper & salt

Let's get to work

Preparation
  1. Slice the onion and peppers into chunks.
  2. Peel the tamarillo and cut into small pieces. Keep half a tamarillo aside for decoration.
  3. Cut the cucumber into small cubes as well and keep a tablespoon of cucumber cubes aside for decoration.
  4. Put all the chopped ingredients and tomato juice in a blender and blend until smooth.
  5. Place the gazpacho in a bowl and season with salt, pepper and balsamic vinegar.
  6. Put the gazpacho 60 minutes in the fridge.
  7. Serve the gazpacho in small appetizer glasses. Garnish each glass with a few diced cucumber and half a cherry tomato.
  8. Garnish with a wedge of tamarillo on each glas.

Tip

The gazpacho can be served as an appetizer. The recipe is enough for 2 people.
