Prepare these meringues for dessert or a festive appetizer. The combination of the crispy lime meringue and the whipped cream is heavenly.


  • 3 EAT ME limes
  • 2 eggs
  • 75 g icing sugar
  • 115 g sugar
  • 200 ml cream

Let's get to work

  1. Preheat oven to 125°C.
  2. Rinse and grate the lime zest of these 3 limes.
  3. Separate the egg whites from the yolks beat the egg whites with 75 gram sugar and the lime juice
    from 1 lime until it's airy and light.
  4. Carefully fold the icing sugar through the mixture.
  5. Use a piping bag to pipe 8 flat rosettes (around 1 cm) and 8 higher rosettes (around 2 a 3 cm)
    leaving enough space between them on a baking tray lined with baking paper.
  6. Bake the meringues in the oven for about 30 minutes. Bake the bigger and smaller rosettes just as long.
  7. In the meantime beat the cream until stiff with 40 gram sugar and the lime juice from the two left over limes.
  8. Leave the meringues to rest for about 15 minutes when you have taken them out of the oven.
  9. Pipe a layer of the whipped lime cream on the flat rosettes and sprinkle a little lime zest on top,
    than put the bigger rosettes on top of that as well.
