  • Kumquats salad with duck breast

Smoked duck breast and kumquats are the basis for this intense flavoursome salad. Delicious as a main dish salad or for lunch.


  • 8 EAT ME kumquats
  • 1 EAT ME lime
  • 100 g mixed lettuce
  • 3 tomatoes
  • ¼ cucumber
  • 1 red bell pepper
  • 50 g pine nuts
  • 50 g smoked duck breast
  • 100 g sugar
  • 50 ml olive oil
  • 1 tbsp. orange juice
  • 1 tbsp. tarragon vinegar
  • 1 tbsp. honey
  • ½ tsp. mustard
  • Pepper & salt

Let's get to work

  1. Wash the kumquats and the lime, slice the lime in two. Gently boil the kumquats in 100 ml of water for 20 minutes together with the sugar and the lime. Take the pan of the heat, drain the water and let it cool down.
  2. Rinse the tomatoes, cucumber and bell pepper. Cut the bell pepper in half and remove the seeds, slice in small strips together with the tomato and cucumber. Cut the cooked kumquats in small wedges.
  3. Roast the pine nuts in a dry frying pan until golden brown.
  4. Combine the olive oil, tarragon vinegar, honey and mustard together to make a smooth dressing.
  5. Combine the lettuce, bell pepper, tomato and half of the kumquats in a bowl. Pour the dressing over the salad, arrange the chicken breast slices on top. Lastly sprinkle the pine nuts and the other half of the kumquats over the salad.
