A delicious fresh and healthy salad. The salad is also exceptionally colourful, so a party to present.

Ingredients

  • 150 g EAT ME haricots verts
  • 1 yellow bell pepper
  • 30 g mixed green salad
  • 150 g large carrot
  • 200 g cherry tomatoes
  • 150 g feta
  • 25 g pine nuts
  • 2 tsp. olive oil
  • Pepper & salt

Let's get to work

Preparation
  1. Preheat oven to 180 °C.
  2. Roast the pine nuts in a dry frying pan until they are golden brown and leave to cool down.
  3. Peel the carrot and cut in diagonal slices than cut them is small strips.
  4. Remove the ends off the haricots verts.
  5. Bring water to the boil and blanche the carrot strips for 3 minutes. Rinse them immediately in cold water.
  6. Do the same with the haricots verts.
  7. Cut the bell pepper in small strips.
  8. Place the cherry tomatoes in an oven dish and place them in the oven for 10 minutes until baked.
  9. Mix the carrot, bell pepper, haricots verts and the mixed green salad and add sea salt, pepper and olive oil to taste.
  10. Divide over two plates.
  11. Crumble the feta and divide this together with the pine nuts and the baked cherry tomatoes on top of the salad.
