Pumpkin is deliciously sweet and that's why kids love it! Rosti is really yummy and so easy to make. Surprise your children with this dish!

Ingredients

  • ½ EAT ME butternut squash
  • 3 tbsp. corn
  • 1 tbsp. honey
  • 2 tbsp. flour
  • 1 egg
  • pinch of curry
  • pepper & salt
  • 3 tbsp. olive oil

Let's get to work

Preparation
  1. Peel the butternut squash and remove the seeds with a spoon. Grate the squash and put into a mixing bowl.
  2. Mix the grated squash with the corn, honey, flour, pepper, salt and curry. Add half a beaten egg.
  3. Heat olive oil in a frying pan and scoop several spoons of the pumpkin mixture into the pan. Bake the rosti on medium heat on both sides for about 5 minutes.
