Sweet potato skewers

Sweet potato skewers

    4 sweet potatoes
  • 5 g fresh coriander
  • 2 tbsp mayonnaise
  • 2 tbsp sweet chilli sauce
  • 3 tbsp olive oil
  • Salt

  • BBQ or grill pan
  • Metal skewers

Preparation method

  1. Scrub the sweet potatoes clean, slice them into 2 cm slices and then slice into quarters.
  2. Cook the sweet potato for about 5 minutes. Rinse under cold running water to stop the cooking process. Leave to cool slightly.
  3. In the meanwhile, finely slice the coriander and mix through the mayonnaise and chilli sauce.
  4. Thread the sweet potato chunks onto the skewers. Brush with olive oil and sprinkle with salt. Grill the skewers on the barbecue for about 6 minutes. Turn them regularly.
  5. Serve the sweet potato skewers with the dipping sauce.

Tip: Like things hot and spicy? Replace 1 tablespoon of chilli sauce with ½ a tablespoon of hot sriracha sauce.
