Sweet potato röstis

Rösti is a delicious dish. Traditional made with ordinary potatoes, they taste equally good made with sweet potato. You can vary endlessly, and add all kinds of vegetables as you wish.

Sweet potato röstis

    600 g sweet potatoes
  • 2 spring onions
  • 1 clove of garlic
  • 2 eggs
  • 1 tsp (smoked ) paprika powder
  • 100 g shiitake
  • 3 tbsp olive oil
  • salt and pepper

Preparation method

  1. Peel the sweet potatoes. Coarsely grate and place in a mixing bowl. Finely slice the spring onion. Add to the bowl. Finely slice the garlic and add to the bowl. Beat the eggs. Add to the bowl . Season the mixture with the paprika powder, salt and pepper. Combine all the ingredients well.
  2. Thinly slice the shiitake. Heat 1 tablespoon of olive oil in a large, non-stick frying pan. Fry the shiitake for 5 minutes on a medium heat until soft. Add to the sweet potato mixture and mix well.
  3. Wipe the pan clean so there is no liquid left Heat the rest of the olive oil in the frying pan. Spoon the mixture into the pan in circles of approx. 8 cm Æ into the pan. Fry the rösti on a low heat for approx. 10 minutes until crisp, browned and cooked through. Turn them halfway. Place a lid on the pan if they do not cook inside.

 

  1. Serving tip: Scatter with extra spring onion rings and serve with a spoonful of sour cream or crème fraîche. A delicious starter! The recipe then is no longer lactose free.
