Passion fruit filled with smoked chicken

  • 175 g smoked chicken
  • ¼ cucumber
  • 3 tomatoes
  • 2 tbsp (vegan) yoghurt
  • ½ tsp curry powder
  • 4 passion fruits
  • 8 salad leaves (e.g. frisée)
  • salt and pepper

Preparation method

  1. Slice the smoked chicken and cucumber into 6 mm cubes and put them in a bowl. Cut the tomato in half, remove the seeds and slice the flesh into 6 mm cubes. Add to the bowl.
  2. Mix the yoghurt with the curry powder and season with salt and pepper. Add to the chicken salad and mix well to combine.
  3. Halve the passion fruits and scoop out the flesh with a spoon.
  4. Fill each skin with a salad leaf. Add a generous spoonful of chicken salad. Divide the passion fruit cubes over the top.
  5. Tip: Replace the curry powder with garam masala or madras for a stronger flavour. Or add a few drops of Tabasco for a spicy touch.
