Mango breakfast cake

  • 1 EAT ME mango
  • 2 tsp cinnamon
  • 1 tbsp maple syrup
  • 2 eggs
  • 100 g quark
  • 85 g oat flour
  • 2 tsp baking powder
  • Raisins and walnuts to taste

  • 2 ovenproof dishes

Preparation method

  1. Preheat the oven to 180 °C.
  2. Cut the mango into two halves along the stone. Score each half into squares without cutting through the skin. Turn out the halves with your thumb and slice off the cubes. Or use a mango slicer.
  3. Heat a little coconut oil in a pan. Fry the mango with 1 tsp cinnamon and the maple syrup. Add the nuts and raisins. 
  4. Beat the eggs with the quark. Add the flour, baking powder, 1 tsp of cinnamon and pinch of salt. Mix everything well and divide over the forms. Divide the baked mango over the cake forms (reserve some as a garnish)
  5. Bake the cakes in the oven for about 25 minutes. 
  6. Serve with the reserved mango cubes and blueberries if wished.
