Italian oven dish

Italian oven dish

  • 4 chicken legs
  • 2 tbsp olive oil

    200 g mini courgette
  • 50 g black olives
  • 6 cloves of garlic
  • 50 g pancetta
  • 250 g cherry tomatoes at the vine
  • 1 tps dried Herbes de Provence
  • 3 sprigs of basil
  • salt and pepper

Preparation method

  1. Preheat the oven to 200 °C.
  2. Season the chicken legs with salt and pepper. Place in an oven dish. Drizzle with olive oil. Bake the chicken in the oven for about 20 minutes.
  3. After 20 minutes add the mini courgettes, olives, unpeeled garlic, pancetta and cherry tomatoes. Season with the Italian herbs. Bake for another 25 minutes in the oven or until the chicken is cooked.
  4. Finely chop the basil. Before serving, press the garlic out of the skin and spread over the chicken. Sprinkle with the basil.
