Grilled green asparagus with Parmesan cheese and hazelnuts
This simple recipe combines green asparagus with Parmesan cheese, sweet cherry tomatoes and crunchy hazelnuts. Perfect as a vegetarian side dish and ready to serve in an instant.
Trim away the woody base (1-2 cm) of the asparagus. Arrange the green asparagus in a single layer on a baking tray or oven dish. Drizzle with olive oil. Season with salt and pepper.
Chop the garlic into slices and scatter over the green asparagus. Add the tomatoes to the green asparagus on the baking tray. Roast the asparagus and tomatoes in the middle of the oven for about 15 minutes until cooked.
Roughly chop the hazelnuts.
Remove the green asparagus and tomatoes from the oven. Grate the Parmesan cheese and sprinkle the hazelnuts over the top.
