Elevate your sushi night with this Saitaku sushi rice, mango and avocado inside out roll. A colourful and tasty dish. Swap the flavours and use salmon or crispy chicken for a delicious surprise.
Cook the sushi rice according to the instructions on the package. Leave to cool until just warm.
Blend all sauce ingredients into a smooth, slightly syrupy sauce. Set aside.
Slice the avocado all the way around the stone. Twist the two halves apart. Remove the stone and scoop the flesh out of the skin with a spoon. Slice the flesh into thin strips.
Cut the mango into two halves along the stone. Peel and finely slice the mango.
Place a nori sheet on a bamboo mat with the shiny side facing down. Spread a thin layer of rice over the entire sheet and sprinkle with sesame seeds. Turn the nori sheet over (rice on the outside).
Place the avocado in the centre of the nori sheet. Roll up tightly to form an inside out roll.
Arrange the mango slices in a overlapping pattern on top of the roll. Lightly press with the bamboo mat.
Sprinkle or brush some mango sauce over the mango for shine and flavour.
Slice the roll into 6 equal pieces with a sharp, wet knife.
Tip: use delicious raw salmon or crispy chicken in the sushi roll.
