This poké bowl with mango and crispy chicken combines sweet, savoury and a slightly spicy sensation in one bowl. Saitaku poké rice, chunks of mango, avocado and crispy chicken combine to create a filling and surprisingly tasty dish.
Prepare the poké rice according to the instructions on the package. Mix the rice with the rice vinegar and salt. Set aside to cool.
Heat some olive oil in a pan and fry the chicken schnitzels until they are golden brown on both sides. Set aside and slice into chunks.
Cut the mango into two halves along the stone. Score one half into squares without cutting through the skin. Turn out the half with your thumb and slice off the cubes.
Slice the avocado all the way around the stone. Twist the two halves apart. Remove the stone, scoop the flesh out of the skin and slice thinly.
Slice the spring onion into thin rings and grate the cucumber.
Thinly slice the radish.
Divide the rice between two bowls. Top with the chicken, mango, avocado, cucumber, carrot and spring onion.
Garnish the poké bowls with the spicy mayo and black sesame seeds.
