French toast with mango and coconut

  • 1 mango
  • 4 slices of old bread
  • 2 eggs
  • 50 ml whipping cream
  • 50 ml coconut milk
  • 1 tbsp sugar
  • 2 tbsp grated coconut
  • butter or sunflower oil for frying
  • icing sugar

Preparation method

  1. Cut the mango into two halves along the stone. Remove the skin and slice the flesh into 5 mm cubes. Or use a mango slicer.
  2. Remove the crusts from the bread. Beat the eggs with the cream, coconut milk and sugar in a shallow bowl. Dip the bread into the egg mixture. Leave the slices in long enough to soak up the liquid.
  3. Divide the mango and coconut over 2 slices of bread. Leave 1 cm free around the edge. Cover with the other 2 slices and press the edges firmly together. Use a heart-shaped cutter to cut out a heart from the bread.
  4. Heat a non-stick frying pan. Melt some butter or sunflower oil in the pan. Fry the French toast on a medium heat on both sides for approx. 5 minutes until golden brown. Put the lid on the pan for the last 2 minutes to make sure the inside is properly cooked.
  5. Serve immediately sprinkled with a little icing sugar.


  1. Tip: Add a teaspoon of vanilla extract to the egg mixture for an even richer taste.
