Dragon fruit tower with Parma ham and melon

  • 1 Galia melon
  • 1 red sweet pepper
  • 1 tbps honey
  • 1 tbsp mustard
  • 2 tbsp extra virgin olive oil

    2 dragon fruit
  • 150 g Parma ham
  • 6 salad leaves (garnish)
  • salt and pepper

  • Melon baler
  • Small cutter approx. 3 cm

Preparation method

  1. Halve the melon and remove the seeds. Remove the skin and cut the flesh into 5 mm cubes. Halve the sweet pepper, remove the seeds and slice the flesh into 5 mm cubes.
  2. Combine the honey oil, mustard sugar and olive oil to make a dressing. Season with salt and pepper. Stir the melon and sweet pepper cubes through the dressing.
  3. Cut 1 dragon fruit into slices of medium thickness. Use the cutter to create circles from the flesh. Halve the other dragon fruit lengthwise and use the melon baller to scoop out little balls.
  4. Spoon the melon mixture into the cutter. Press the mixture with a spoon so it forms a firm base for the tower. Top with a dragon fruit circle. Cut the slices of ham in half. Arrange in a curl on top of the tower. Garnish with a salad leaf.
  5. Repeat the steps above to make three towers per plate. Garnish with the dragon fruit balls.
