Crostini with avocado and prawns

A very simple dish but oh so delicious! Perfect to serve with a (Christmas) drink or as a starter. Prepare everything in advance for your convenience, so that you can serve it when you please.

  • 1 (wholegrain) baguette
  • 2 cloves of garlic
  • 32 peeled raw prawns
  • 2 tbsp. olive oil
  • EAT ME Avocado
    2 avocados
  • 1 tbsp. crème fraîche
  • Salt and pepper

Preparation method

  1. Heat the grill pan. Cut the baguette into 16 slices and toast the bread in the grill pan until golden brown.
  2. Crush 1 clove of garlic and place in a mixing bowl with the prawns and add 1 tablespoon of olive oil. Sprinkle with salt and pepper to taste. Heat the grill pan over medium heat and grill the prawns in approx. 3 minutes or until they turn a nice pink. Turn them around halfway.
  3. Crush the other clove of garlic. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone and spoon out the flesh. Mash the avocado roughly. Mix the garlic and crème fraîche with the mashed avocado. Season to taste with salt and pepper.
  4. Brush the avocado puree on the baquettes and top with the prawns.
