Cook the couscous according to the instructions on the package.
Slice the sweet pepper and carrot and into 6 mm cubes. Finely chop the onion.
Heat the olive oil in a frying pan. Fry the onion and carrot on a medium heat for 5 minutes. Add the ras el hanout seasoning. Add the sweet pepper and fry for another 5 minutes or until the vegetables are just cooked but still retain their bite.
Peel and slice the kiwis into chunks. Stir the couscous with a fork and stir through the vegetables and kiwi. Finely chop the chives and add to the couscous. Season with salt and pepper.
