Butter board topped with figs

Butter is delicious by definition, but softened , smooth butter is another dimension altogether. Making soft, artistic butter swirls will make you totally zen. Tasty fresh figs and honey add even more flavour.

Ingredients

Butter board

  • 250 g butter, at room temperature
  • 2 tbsp full-fat milk, at room temperature
  • 1 tsp smoked salt (or to taste) + extra to sprinkle
  • 3 sprigs of thyme
  • 2 tbsp pecan nuts

Preparation method

  1. Beat the butter with the milk and the salt using the mixer for about approx. 5 minutes until light and airy. If you have a stand mixer, simply beat for 10 minutes to achieve the right creamy consistency.
  2. Meanwhile, strip the thyme leaves from the sprigs and roughly chop the pecan nuts. Slice the figs into wedges. Spread the butter over the board with a teaspoon and create swirls. Drizzle with the honey, artfully arrange the figs and scatter the thyme and pecan nuts on top. Season with freshly ground pepper and, if desired, add some extra smoked salt. Serve with( toasted) sourdough bread.  

Tip: Also tastes great with fried, crumbled pancetta. No extra salt is needed in this case.
