Avocado toast with egg and radish

Ingredients

Avocado toast

  • 2 eggs
  • EAT ME Avocado
    1 EAT ME avocado
  • 1 tsp lime juice
  • 2 slices of wholemeal bread
  • 2 small radishes
  • Pinch of chilli flakes
  • Salt and pepper

Preparation method

  1. Bring water to the boil in a pan. Add the eggs and boil for about seven minutes for soft-boiled eggs. Plunge the eggs into cold water. Peel, then slice the eggs in half.
  2. Cut the avocados all the way around the stone. Twist the two halves apart. Remove the stone, scoop the flesh out of the skin and place the flesh in a bowl.
  3. Mix the lime juice, salt and pepper with the avocado flesh. 
  4. Toast the bread in a toaster or grill pan.
  5. Spread the mashed avocado on the toast. Arrange the sliced egg on top. Garnish with thin wedges of radish. Sprinkle with the chilli flakes and salt.
