Avocado toast with salmon and pomegranate
Perfect & healthy breakfast: avocado toast with smoked salmon and pomegranate seeds. Easy to make, bursting with healthy fats and filling enough to start the day well. Also makes an amazing lunch!
- Cut the avocado all the way around the stone. Twist the two halves apart. Remove the stone, scoop the flesh out of the skin and mash the flesh. Season with salt and pepper.
- Brush the bread with the avocado, spread with the salmon and sprinkle with the pomegranate seeds and the cress.
