  • Vegetarian haricots verts spring rolls

You can just imagine being in the Far East with these delicious homemade spring rolls. It might sound difficult but making these vegetarian spring rolls is quite simple and they taste delicious.

Ingredients

  • 150 g EAT ME haricots verts
  • 1 EAT ME rawit pepper
  • 12 spring roll pastry filo sheets
  • 100 g large carrot
  • 100 g bean sprouts
  • 100 g onion
  • 1 clove garlic
  • 2 tbsp. sweet soy sauce (kecap manis)
  • 1 tbsp. soy sauce (salty)
  • 1 egg (egg white)
  • ½ tbsp. brown sugar
  • 1 tbsp. flour
  • 2 tbsp. olive oil

Let's get to work

Preparation
  1. Preheat the deep fryer to 180 °C.
  2. Rinse the haricots verts and cut off the ends. Cut them in small pieces.
  3. Peel the onion, garlic and the carrot. Chop the onion and carrot in small pieces.
  4. Rinse the bean sprouts in cold water and leave to drain.
  5. Slice the rawit pepper in half and remove the seeds, slice very finely.
  6. Heat the olive oil in a wok or frying pan and fry the onions, haricots verts and the carrot. Stir-fry this for 4 minutes.
  7. Add the crushed garlic. Then add the sweet soy sauce, the salty soy sauce and the brown sugar. Stir-fry for another minute.
  8. Add the bean sprouts and cook for another minute.
  9. Add the flour and remove from the heat. This will thicken the sauce.
  10. Use six spring roll pastry filo sheets and add an extra sheet of the filo pastry. Divide the filling over the six double filo pastry sheets.
  11. Separate the yolk from the egg white and whisk the egg white shortly.
  12. Fold 2 corners of the filo pastry sheets to the middle of the sheet. Fold 1 of the other corners across the filling. Brush the last corner with egg white and fold across the spring roll.
  13. Deep fry the spring rolls for about 5 to 6 minutes at 180 °C.

Tip

Serve the spring rolls with a sweet and sour sauce with a bit of coriander.
