Sweet potato burgers

The ideal dish for the #meatslessmonday or the #groenemaandag. A tasty burger without meat or fish. The burger is packed with flavour - and is sure to please even meat loving men! Serve the burger with a tasty sauce or on a crispy roll.

Sweet potato burgers

    500 g sweet potatoes
  • 1 clove of garlic
  • 5 g fresh basil
  • 5 g fresh coriander
  • 3 eggs
  • 1 tsp curry powder
  • 3 tbsp olive oil
  • 5 g fresh mint

    1 lime
  • 5 tbsp full fat quark
  • 1 tbps honey
  • 4 cridpy wholemeal rolls
  • 50 g spinach
  • salt and pepper

Preparation method

  1. Peel the sweet potatoes. Coarsely grate and place in a mixing bowl. Finely slice the garlic, basil and coriander and add to the bowl. Beat the eggs. Add to the bowl . Season the mixture with the curry powder, salt and pepper. Mix well. Shape into four burgers of equal size with damp hands.
  2. Heat the olive oil in a frying pan. Fry the burgers for about 15 minutes until golden brown and cooked. Turn them halfway.
  3. Meanwhile, finely chop the mint. Squeeze the lime. Mix the mint with the quark. Season with lime juice, honey, and add salt and pepper to taste.
  4. Arrange the spinach on one half of each roll. Top with a burger and a spoonful of sauce.

 

  1. Tip: Use a serving ring to shape and fry the burgers for a professional finish.
  2. Variation tip: Replace the spinach with watercress.
