This elegant and tasty salmon dish with stir-fried mangetout is simple to prepare. A wonderful starter to serve at a festive dinner for friends or family.
Slice the mangetout lengthwise into thin strips. Heat the olive oil in a wok and stir-fry the mangetout on a high heat in 2 minutes until just tender. Allow to cool completely.
Divide the salmon into 4 equal slices. Arrange a slice of double-folded salmon on each plate. Spoon or pipe a layer of cream cheese onto the salmon and add some of the mangetout. Repeat this step. Garnish with the salad leaves. Season with pepper.
Variation tip: Smoked trout makes a tasty alternative to salmon.
