Make a refreshing sgroppino with lime. Serve this frothy Italian dish as a palate cleanser or dessert during the festive season. The lime adds a zing of freshness.
Put the sorbet into a large bowl and leave to soften a little. Squeeze one lime and slice the other into thin slices. Add the lime juice and vodka to the sorbet. Add the prosecco, stirring all the time with a whisk (you might not need to add all the prosecco, taste while preparing. Add enough to create a thick liquid consistency until the flavour is right).
Pour the sgoppino into the glasses and decorate with lime.
Tip: Prefer an alcohol-free version? Replace the prosecco with sparkling mineral water or a lemon-flavoured soft drink. Ginger beer or ale also make a tasty alternative.
Tip: Like it sweet? Add 1- 2 tablespoons of icing sugar.
