Arrange the salad leaves, mozzarella and walnuts on a plate. Cut the Parma ham into slices and add to the plate. Cut the pears into quarter, remove the core and cut the pear into thinner wedges. Strip the redcurrants from the stalks (but reserve a few stalk as a garnish). Add to the salad.
Combine the olive oil, vinegar and mustard to make a dressing. Season with salt and pepper and drizzle over the salad.
Prefer not to use meat? Replace the Parma ham with roughly chopped smoked almonds.
