A warming dish of creamy mashed potatoes and sweet mango is pure comfort food. Prepare double the quantity and freeze half. Exactly what you need after a hard day at work! Simply heat up and enjoy.
Peel the potatoes and cut into equal sized pieces. Cook in boiling water with a pinch of salt for about approx. 20 minutes until tender. Meanwhile, heat the milk and butter in a saucepan. Drain the potatoes. Add the milk and butter and mash the potatoes roughly. Season with pepper.
Meanwhile, slice the onion into half rings and the sweet pepper into cubes. Heat the olive oil in a large pan. Fry the onion for about 3 minutes until its softens. Add the mince, sweet pepper and curry powder and fry for another 3 minutes.
Cut the mango into two halves along the stone. Score each half into squares without cutting through the skin. Turn out the halves with your thumb and slice off the cubes. Or use a mango slicer.
Add the mango to meat and mix well. Season with salt and pepper to taste. Transfer the meat to an oven dish. Spoon the mashed potato on top of the meat. Sprinkle with the cheese. Bake the dish in the middle of the oven for approx. 15 minutes or until the cheese has melted and the potato topping is golden brown.
If you prefer vegan or vegetarian, replace the milk and butter with the cooking liquid from the potatoes and olive oil. Use vegetarian or vegan minced meat instead of beef and omit the cheese. For an extra savoury bite, add some sliced sun-dried tomatoes to the mashed potatoes.
