A twist on a traditional Dutch dish. Make your own tasty mash with a starring role for sweet potato. The peppery flavour of rocket partners perfectly with the sweet potato in tis dish.
Peel the sweet potatoes. Cut into evenly sized chunks. Boil in a large pan of water for 15 minutes (make sure the sweet potatoes are covered with water). Drain and briefly return to the heat. Steam dry over a low heat for a minute.
Add the olive oil and butter. Mash coarsely using the potato masher. Season with the mustard and salt and pepper. Stir the rocket through the mash. Serve immediately.
Tip: Serve the mash garnished with crumbled feta, walnuts and a slice of lemon.
