Preparation method
- Place the chive stalks in a bowl of ice-cold water, so you can bend the stalks easily.
- Cut the mango into two halves along the stone. Score each half into squares without cutting through the skin. Turn out the halves with your thumb and slice off the cubes.
- Place a slice of Parma ham on a cutting board. Spoon a tablespoon of mango cubes onto the centre of the slice. Fold the sides of the ham together to wrap around the mango. Gently tie the parcel with a chive stalk. Repeat with the remaining slices.
