Mango pistachio bites

Turn a small snack into a tropical party! Sweet mango, yoghurt and a touch of honey, covered in chocolate and topped with crunchy pistachios. It will make you happy and is a great start to the day.

Ingredients

Mango bites

  • 1 EAT ME mango
  • 300 g Greek yoghurt
  • 1 tbsp honey
  • 100 g white chocolate
  • 1 tbsp pistachio paste
  • Handful of finely chopped pistachio nuts

Preparation method

  1. Cut the mango into two halves along the stone. Score each half into squares without cutting through the skin. Turn out the halves with your thumb and slice off the cubes. Or use a mango slicer.
  2. Stir the mango cubes into the yogurt and honey. 
  3. Line a plate with baking paper. Spoon small balls of yogurt and mango onto the plate. Place the plate in the freezer until the yogurt is firm. 
  4. Melt the chocolate au bain-marie and add the pistachio paste. Mix well. Dip the frozen yogurt balls in the chocolate. Place in the fridge for at least two hours to allow the bites to firm. 
  5. Divide the pistachio nuts over the bites.
