Slice the lemongrass stalks into large pieces. Bring 1 litre of water to the boil in a saucepan and add the lemongrass and cinnamon sticks. Simmer gently on a low heat for 5 minutes. Take the pan off the heat and let it sit for another 3 minutes. Pour the tea through a sieve.
Squeeze the lime. Season the tea with lime juice and honey.
