Preparation method

  1. Place the chia seeds, coconut milk, honey and vanilla extract in a bowl. Mix well and allow to stand for 10 minutes. Then mix again to prevent lumps. Place the mixture in the fridge for at least two hours (or overnight) to set.
  2. Cut the mango into two halves around the stone. Score each half into squares without cutting through the skin. Turn out the halves with your thumb and slice off the cubes. Blend the mango into a smooth purée with a blender.
  3. Spoon a layer of chia mousse into a glass. Add a layer of mango purée. Repeat until the glass is full. 
  4. Garnish with the strawberry, grated coconut and a mint leaf.
