Grilled vegetable skewers

Grilled vegetable skewers

  • BBQ or grill pan
  • 4 long wooden skewers (soaked in water for at least 1 hour) or metal skewers

Preparation method

  1. Trim away the top and base of the squash. Halve lengthwise and scoop out the seeds with a spoon. Slice the flesh into equal slices of approx. 6 cm.
  2. Remove the leaves around the corn cobs. Slice the cobs into quarters. Slice the sweet pepper into 4 cm pieces. Slice away the base (1-2 cm) of the asparagus and halve them.
  3. Slide the vegetables onto 4 skewers. Brush with olive oil. Grill the vegetable skewers on the BBQ for approx. 10 minutes. Turn them regularly. Alternatively, heat a grill pan and grill them for around 15 mins. Season to taste with salt and pepper.

 

  1. Variation tip: Add a few cubes of halloumi The recipe then is no longer lactose free.
