Preparation method

  1. Preheat the oven to 200 °C. Line a baking tray with baking paper.
  2. Dice the sweet potatoes and spread over the baking tray. Add the Tex Mex seasoning. Season with salt and pepper to taste. Mix all the ingredients well. Roast the sweet potato in the oven for 20 minutes.
  3. Heat the olive oil in a frying pan. Fry the minced meat and add the taco seasoning mix. Fry until the minced meat is cooked through. 
  4. Meanwhile, cut the avocados all the way around the stone. Twist the two halves apart. Remove the stone, scoop the flesh out of the skin with a spoon and cut into slices. 
  5.  Arrange all the ingredients on a large plate. Drizzle with honey. Add some chilli flakes to taste. 

Tip : Prefer vegetarian? Use plant-based mince.
