Avocado is a great ingredient in your evening meal too. This creamy pasta with broccoli, basil and avocado is quick to prepare, nutritious and bursting with flavour. Perfect for an easy dinner after a workout or a long day at work!
Cook the pasta according to the instructions on the package. Drain.
Roughly chop the broccoli and cook in 15-20 minutes.
Finely chop the onion and garlic. Heat the olive oil in a frying pan and fry the onion and garlic. Set to one side.
Slice the avocado all the way around the stone. Twist the two halves apart. Remove the stone and scoop the flesh out of the skin with a spoon. Use one half for the sauce. Thinly slice the other half and reserve.
Heat a dry frying pan and roast the pine nuts on medium heat in about 3 minutes until golden brown. Cool on a plate.
Drain the broccoli and reserve a cup of the cooking liquid. Place the broccoli, onion, garlic, Parmesan cheese, half the avocado, basil and cooking liquid in the blender. Blend to create a smooth sauce. Season with salt and pepper.
Drain the pasta and add to the pan with the sauce. Mix well. Serve the pasta garnished with the pine nuts, the remaining avocado, extra Parmesan cheese and basil.
