Braised leek with thyme

  • 1 kg leek
  • 1 clove of garlic
  • 1 shallot
  • 2 tbsp olive oil
  • 3 sprigs of thyme
  • salt and pepper

Preparation method

  1. Halve de leeks slice across diagonally into chunks. Finely chop the garlic and the shallot.
  2. Heat the olive oil in a large pan. Fry the shallot and garlic on a medium heat for about 3 minutes until they soften. Add the leek and the sprigs of thyme.
  3. Turn down the heat. Braise the leek for another 10 minutes with the lid on the pan. Stir occasionally. Season with salt and pepper.

 

  1. Tip: Replace the olive with butter for an extra creamy flavour. Or use ghee for a savoury touch.
