Finely chop the onion and dice the tomato. Slice the avocados all the way around the stone. Twist the two halves apart. Remove the stone, scoop the flesh out of the skin and cut into thin cubes. Mix the avocado with the onion and tomato.
Squeeze the lime and drizzle the juice over the avocado salad to taste. Mix the quark and the mayonnaise and season with salt and pepper.
Divide the lettuce and avocado salad over the tortilla wraps and roll them up as tightly as possible.
