Ingredients
Avocado toast
- 2 slices of sourdough bread
- 1 Avocado
- 1 tbsp pistachio nuts
- 1 tbsp sunflower seeds
- Fresh herbs such as parsley, chervil and pea shoots
- Salt and pepper

- Toaster or grill pan
Preparation method
- Toast the bread in a toaster or grill pan.
- Make a cut in the avocados around the stone. Twist the two halves apart. Remove the stone and scoop the flesh out of the skin with a spoon. Slice the flesh into thin slices.
- Layer the slices of avocado on the toast in an overlapping pattern.
- Sprinkle with coarsely chopped pistachios, sunflower seeds and finely chopped fresh herbs.
- Season with salt and pepper.
