Avocado toast with green herbs and nuts

Ingredients

Avocado toast

  • 2 slices of sourdough bread
  • 1 Avocado
  • 1 tbsp pistachio nuts
  • 1 tbsp sunflower seeds
  • Fresh herbs such as parsley, chervil and pea shoots
  • Salt and pepper

Kitchen tools

  • Toaster or grill pan

Preparation method

  1. Toast the bread in a toaster or grill pan.
  2. Make a cut in the avocados around the stone. Twist the two halves apart. Remove the stone and scoop the flesh out of the skin with a spoon. Slice the flesh into thin slices.
  3. Layer the slices of avocado on the toast in an overlapping pattern.
  4. Sprinkle with coarsely chopped pistachios, sunflower seeds and finely chopped fresh herbs.
  5. Season with salt and pepper.
