This recipe of fresh tagliatelle with avocado, salmon and spinach will definitely amaze you. The flavours of these ingredients combine perfectly together and you can eat lots of vitamins in one go.

Ingredients

  • 2 EAT ME avocados
  • 10 g of basil
  • 400 g spinach
  • 300 g salmon fillets
  • 350 g of fresh tagliatelle
  • 50 g of grated Parmesan cheese
  • 2 cloves of garlic
  • 4 tbsp. olive oil
  • salt & pepper

Let's get to work

Preparation
  1. Prepare the tagliatelle according to the instructions on the packaging.
  2. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone and scoop out the flesh.
  3. Mix the avocado, basil, garlic, Parmesan cheese and 1 tablespoon of olive oil in the blender until smooth.
  4. Cook the spinach in 1 tablespoon of olive oil and let it shrink.
  5. Then add the tagliatelle and avocado sauce and stir gently stir, lower the heat.
  6. Sprinkle salt and pepper on the salmon fillets. Heat 2 tablespoons of olive oil and fry the salmon for about 5 minutes.
  7. Meanwhile, season the pasta with salt and pepper. Evenly divide the pasta over the plates and serve with the salmon on top.
