Surely the dish of the moment is Poké bowl. We have made a delicious variation with mango, avocado and sweet potato. If you want, you can also easily add your favourite ingredients.

Ingredients

  • 300 g EAT ME sweet potatoes
  • 1 EAT ME mango
  • 1 EAT ME avocado
  • 1 EAT ME pomegranate
  • 300 g corn kernels
  • 150 g sliced red cabbage
  • 300 g chickpeas
  • 250 g basmati rice
  • 2 tbsp. sesame seeds
  • 1 tbsp. olive oil
  • 4 tbsp. soy sauce

Let's get to work

Preparation
  1. Cook the rice by following the instructions on the packet.
  2. Wash the sweet potatoes and cut into equal cubes. Heat 1 tablespoon of olive oil in a saucepan. Bake the sweet potato cubes in about 15 minutes until they are light brown and done.
  3. Cut the top off the pomegranate. Cut gently along the ridges from the top to the bottom. Open the fruit. Then remove the pomegranate seeds.
  4. Cut the mango along both sides of the stone or use a mango slicer. Then cut some strips in the seedless flesh, without cutting through the skin. Also slice in the opposite direction so you get a crosshatch pattern. Spoon the cubes from the mango.
  5. Cut the avocado all the way around, going as deep as the stone. Twist until you can pull the 2 halves apart. Remove the stone with a spoon. Peel the avocado or scoop the flesh out and cut into slices. Make 4 fans with the avocado slices.
  6. Equally divide the rice over 4 bowls.
  7. Then place the sweet potato, mango, avocado, pomegranate seeds, corn kernels, red cabbage and chickpeas on the rice.
  8. Sprinkle some sesame seeds on top.
  9. Season with soy sauce.
